Fabio Cardilio

Fabio Cardilio is the resident and executive chef of Buatta: originally from Rome, he moved to Sicily and he has become an important player in the culinary culture of Palermo. In these years, the Michelin-starred chef has honed his knowledge of traditions, which has allowed him to explore the roots of the culinary heritage of the area.

In addition to leading Buatta’s kitchen in Palermo, Fabio is the executive chef of Buatta’s Turin location in Via Stampatori, where he becomes executive chef of a new project with a broader traditional imprint. Here, in fact, traditional Sicilian cuisine is intertwined with Piedmontese territory, giving depth to that ancient Palermo-Turin link. Carrying it forward in the Turin office is Head Chef Enrico Zanirato, who shares an authentic and contemporary vision of Sicilian cuisine.
