Fabio Cardilio and Moussa Coulibaly

Fabio Cardilio is the resident and executive chef of Buatta: originally from Rome, he moved to Sicily and he has become an important player in the culinary culture of Palermo. In these years, the Michelin-starred chef has honed his knowledge of traditions, which has allowed him to explore the roots of the culinary heritage of the area.
Fabio is also the executive chef of Buatta at the Mercato Centrale Torino. The resident chef in Turin is Moussa Coulibaly, who has been working with chef Cardilio for a long time during which he has learned the art of cooking and the respect for his team.
