Buatta is a project conceived by Franco Virga, Stefania Milano and Davide Bicocchi. It borns inside the famous Valigeria Quattrocchi, an historical leather goods shop born in the 1870 in the heart of the Palermo city centre. The proposal is a cuisine based on the Sicilian and palermitan culinary traditions with the exclusive use of local and seasonal ingredients in order to create simple and authentic dishes with a few high quality raw materials. The aim is a return to ancient traditional tastes with a glance to future through a multicultural, modern and charming dimension.
Thanks to the open style kitchen the culinary experience is not not only linked to the dish prepared but it is possible to assist the preparation of it concentrated in a location result of the restoration designed by architect Fatima Costa which respects the preservation of Liberty Style ( Art Nouveau) elements that keep firmly, also in place, the link between past and future. Buatta is summarized in: quality of raw materials, respect for tradition, innovation in the kitchen
